Spinach and Pear Salad

Ingredients

1 bunch of spinach, leaves picked, washed and roughly chopped if they are large
2 pears, peeled, cored and thinly sliced
½ red onion, thinly sliced
Strong cheese such as blue, feta or goat cheese
Handful of nuts
Dressing:
1 ½ tbsp balsamic vinegar
2 tsp honey
1 tsp Dijon mustard
2 tbsp olive oil
1 clove crushed garlic
½ tsp finely chopped fresh rosemary

Directions

Combine salad ingredients. Combine dressing ingredients and drizzle on top of salad.

The veg is delicious and the growers at Largo are friendly and knowledgable. It's great to know I'm supporting locally grown food. Can't wait for the next box!
